As I just wrote, I visited a rice-growing farm near Livorno Ferraris yesterday. You can read my article "The Hard Life Of Rice Paddy Weeding Female Workers Called Mondine" if you missed it.
The restaurant was packed. There wasn't even a place. Amazing how many people come so far for lunch in a restaurant! However, I also prefer to eat in places where I am sure of finding natural and genuine products. Like the production of this farm.
There was nothing to be done and even the people who weren't booked and who came after me had to leave too.
But an idea came to my mind to ask if it was possible to only have this dish served to take away. I explained to the girls that I was very curious to try this very famous dish. And they agreed. Well, that's not really normal for a restaurant, I have to admit. The visitors who heard our dialogue were really surprised that I was satisfied.
In a short time, my dish was ready to take. I went out of the restaurant and noticed that there were wooden tables outside. Wow!!! It was a really excellent solution. With this marvelous weather, it was so pleasant to eat my dish outside under a beautiful pergola!
Panissa Vercellese is a typical Piedmontese dish, prepared with the classic ingredients of the usual local gastronomy: rice and beans. Two typical ingredients, particularly from the Vercelli area, famous throughout the world for its rice fields. But the dish served in this restaurant still had one "secret" ingredient - a nice sausage! So, Rice, Beans and Sausage.
